As far as I can tell, this just means the clients have the ISA server configured as their proxy, no?
And for that matter, a SecureNAT client is one for which the network is configured to use NATing? I've read so many articles saying "configure your clients as Web Proxy & Firewall Clients" but never any outright of what exactly is meant by this.

Yes WP (Web Proxy) is simply the settings built-in to IE or other app.
S-NAT is really a clientless client. There is no software installed or proxy configured. The client simply sees the ISA server as a firewall/router.
FWC (FireWall Client) is software that intercepts IP traffic defined to go through ISA.
