Which sniffer can I use to sniff packages in ISA ?

I just use the Network Monitor that comes with windows 2000 (server or advanced server). Its pretty basic, but does the job.

If you dont have 2000 server, id use something like nMapNT (you need at least NT/2000 pro though).

There are a lot of sniffer packages out there, and they are updated all the time, so its hard to say which ones best. Try www.astalavista.com (search in the security engined) and you should find a good selection.
