Reports "are-what-they-are",...they are not configuable.
There is also almost no such thing as a "single web site" any longer. You go to just one single web page and you effectively went to a dozen "sites" because of the way that sites link between each other. So a report like would never be truely accuarate or legally binding if the user "got in trouble" due to the sites they went to.
It's not the purpose of TMG i would say but you can do datamining of course.
You can use forefront TMG Reporting, but these are just information to give you an idea (who access the site, and which sites are accessed, what protoctols are used....etc), no big deal. If you want more complex analysis tools, then check a 3rd party vendor.
Open the GUI, choose logs & reports, select the logging tab and then user activity report. Create a one-time report. Change the OVERWRITE statement to the domain\user name required and the default last 7 days to the settings available from the drop down. Shortest time is last 24 hours
